Ingredients
- 1 pound white beans soaked
- 8 cups water
- 1/2 teaspoon unrefined sea salt
- 1 ham bone left from your baked ham
- 1 medium onion chopped
- 1-2 stalks celery chopped
- 4-5 carrots sliced
- 1-2 teaspoons garlic minced
- 1 teaspoon ground mustard
- 1/2 teaspoon ground pepper
- 2-3 bay leaves
- 2 cups leftover ham chopped

Instructions
- The night before, rinse the beans, then cover with water and soak overnight. The next day, drain the beans.
- In a large pot, add the water and salt and bring to a boil. Add the ham bone, beans, onion, celery, carrots, garlic, mustard and bay leaves. Give a stir and reduce heat and simmer for an hour or more.
- Remove the ham bone. My dogs love these yummy leftovers. At this point, add the chopped ham and the ground pepper, and simmer for another 30 to 45 minutes.

This is a great soup to make ahead, enjoy some now and freeze some for later.
